  • 4 tablespoons unsalted butter, divided
  • 1 shallot, finely chopped
  • 2 garlic cloves, minced
  • ½ cup arborio rice
  • 1 lemon, zested and juiced
  • 2½ cups fish stock or seafood broth
  • ½ cup grated Parmesan cheese
  • 6 sprigs fresh thyme
  • 1/4 cup white wine
  • 12 small cubes of mozzarella
  • 2 cups Panko breadcrumbs blended
  • 1/2 cup flour
  • 2 eggs whisked
  • Salt and freshly ground black pepper
