Boil water: put tomatoes, carrots, corn, onion, shallot, garlic, ginger and salt. Add the whole lobster in boiling water for 10-15 minutes. And cover! Take the lobster out, crack the head and pour the juice in the pot! This will make the soup very rich. Then put the head back in the pot too. Leave the tail aside. Add lime, leaves, chili, fish sauce, lemongrass, mushrooms, sugar, lime juice, large shrimp. Cook for about 8-10 minutes. Put lobster tail back in the pot. Add green onions and cilantro. Shimmer for one minute. Serve with more cilantro, of course!
