Longganisa (naked)

Ingredients

  • 1 lb. ground pork
  • 3 T. minced garlic
  • 1 onion, chopped finely
  • 2 T. tomato paste
  • 2 T. rice vinegar
  • 2 T. soy paste
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 T. dark brown sugar
  • 1 T. fine, unflavored bread crumbs
  • 1 egg, beaten
  • 2 T. vegetable oil

Directions

  1. 1. Combine the first 9 ingredients. Let the pork marinate in the spices for at least 1 hour (overnight recommended).
  2. 2. Add the breadcrumbs and egg to the pork mixture. Blend well.
  3. 3. Shape the pork mixture into small patties or sausages (2 in. long, 1/2 in. thick). You may also opt to sauté the pork mixture as is.
  4. 4. Heat oil in a saucepan. Cook the longganisa patties until done, about 2 – 3 minutes each side.
  5. 5. Serve hot with garlic rice, fried egg, and vinegar on the side.
