Low Carb Sausage Muffins

Ingredients

  • 3/4 lb ground country sausage, cut into 12 slices
  • 4 eggs beaten
  • 1 c shredded cheese
  • 3-4 green onions, sliced
  • 5-6 pieces of bacon, cooked crisp and chopped
  • Salt/pepper

Directions

  1. Preheat oven to 350.
  2. Place a slice of sausage into each hole of a 12-hole muffin tin. Press the slices to fully cover the bottom and part of the sides of the muffin holes.
  3. Distribute the shredded cheese evenly into each hole on top of the sausage.
  4. Sprinkle green onion over top the cheese.
  5. Mix salt and pepper into the beaten eggs, and pour the egg into each muffin hole covering the cheese, onion and sausage.
  6. Sprinkle bacon evenly over top.
  7. Bake 25 minutes.
  8. Run a knife around the side of each muffin and pop out. Place muffins on a plate covered with a paper towel to soak up excess grease.
  9. Can be frozen and reheated.
