Ingredients

  • 6 cups butternut squash meat
  • 1 stick butter
  • 1/2 cup heavy cream
  • 2/3 cup maple syrup
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp salt
  • Pepper

Directions

  1. Peel, seed & cut squash into 1" pces & cook in boiling water until very soft. About 20 min. Drain.
  2. Purée in food processor in small batches.
  3. Stir in remaining ingredients, blend well.
  4. Serve hot.
