Ingredients

  • 1 pound jumbo lump or backfin lump crabmeat, fresh or pasteurized
  • 1 large egg
  • 1/4 cup mayonnaise (or sour cream)
  • 1 1/2 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • 1 cups breadcrumbs, ideally fresh from white or sourdough bread
  • 1/4 cup panko breadcrumbs
  • 1 tablespoon freshly chopped flat-leaf parsley
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/4 teaspoon of salt
  • Lemon wedges for serving
