Meatloaf Cupcakes

Ingredients

  • 1 lb. Ground Beef
  • 1/2 lb. Italian Sausage
  • 1 c. Bread Crumbs
  • 1 c. Shredded Carrots
  • 1 c. Tomato Pasta Sauce
  • 1/2 c. Water
  • 2 Eggs
  • 1/2 Chopped Onion
  • 1 tsp. Chopped Garlic
  • 1 tsp. Dried Oregano
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 12 (3/4 oz.) Slices Cheese
  • 1 1/4 c. Water
  • 2 c. Mashed Potatoes

Directions

  1. 1. Heat oven to 450 degrees. Place 12 cup muffin pan.
  2. 2. Combine meatloaf ingredients and mix well. Shape into 12 balls.
  3. 3. Stack 6 slices of cheese and cut to make 12 stacks.
  4. 4. Press stack into center of each ball. Bake for 25 minutes.
  5. 5. Combine mashed potatoes, remaining cheese, and water into pot. Heat until cheese is melted.
  6. 6. Top cupcakes with potato mixture.
