MEXICAN JALAPEÑO CORN BREAD

Ingredients

  • 1 cup plus 1 tbsp yellow cornmeal divided
  • 1/2 lb ground beef
  • 1/2 tsp salt
  • 1/2 baking soda
  • 2 eggs beaten
  • 1 cup milk
  • 1 17oz can of cream style corn
  • 1/4 cup vegetable oil
  • 2 cups of shredded cheddar cheese
  • 1 large onion chopped
  • 1 red/green bell pepper diced
  • 2-4 jalapeño peppers seeded & chopped

Directions

  1. preheat oven to *350
  2. Sprinkle 1 tbsp cornmeal into well greased 10" cast iron skill over medium heat until cornmeal is lightly browned-set aside
  3. Cook ground beef until browned crumbled & drain
  4. Combine 1 cup cornmeal, salt, baking soda
  5. Combine eggs, milk, corn & oil
  6. Mix until dry ingredients are moistened
  7. Pour half batter into prepared skillet, sprinkle with cheese, onion, bell & jalapeños peppers & ground beef
  8. Top with remainder of cornmeal batter
  9. Bake at 350 for 50-55 minutes
