Mini Passion Fruit Cheesecakes

Ingredients

  • 125g crushed biscuits
  • 60g melted butter
  • 250g Philly cream cheese
  • 1/2c caster sugar
  • 2 eggs
  • 1/4c sour cream
  • 4 passion fruit + 2 for decoration

Directions

  1. Preheat oven to 160°.
  2. Add melted butter to crushed biscuits.
  3. Evenly spread over 12 hole cup cake paper lined tin . Press firmly and refrigerate.
  4. Beat Philly and sugar until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Fold in sour cream and 4 passion fruit.
  7. Pour over the bases.
  8. Bake 20-25. minutes or until just set. Leave door ajar to cool.
  9. Refrigerate 3-4h.
  10. Drizzle with extra passion fruit pulp before serving.
