Oven Roasted Smoked Potatoes And Sausage

Ingredients

  • 1 package smoked sausage (peel if necessary and slice into rounds)
  • 1 large onion peeled and chopped
  • 5 large potatoes, peeled and chopped into 1/2 inch cubes
  • Olive oil
  • Fine sea salt
  • Freshly ground pepper
  • Sweet paprika
  • Dried thyme
  • Handful of grated strong cheddar cheese

Directions

  1. Preheat oven to 400
  2. Line large baking pan with several sheets of aluminum and drizzle oil and set aside
  3. Put sausage rounds, onions and potatoes into a large bowl
  4. Drizzle with couple TBS of olive oil and season with salt, pepper and paprika and dried thyme
  5. Toss with hands to distribute
  6. Pour into tray
  7. Bake for 45 mins - 1 hour, stirring every 15 mins or so until golden brown and tender.
  8. Turn off oven, scatter cheese and place back in oven for a few minutes to melt
