Ingredients

  • 1-2 stalks celery
  • 1/2 cup butter
  • 3 to 4 cups half and half, whole milk, or milk and cream
  • 23ounces oysters with liquor
  • Salt and pepper
  • Cayenne or hot sauce (optional)

Directions

  1. Sauté celery and shallots in butter
  2. Add half and half
  3. Do not boil half and half
  4. Add and Cook oysters until curly edges
  5. Salt and pepper to taste
  6. Serve with a good bread
