2. Add in the milk, vanilla, and melted butter/oil. Stir until just combined — don’t overmix (a few small lumps are fine).
3. Heat a non-stick frying pan over medium heat and lightly grease with a little butter or oil.
4. Pour the batter into the pan (all at once for one big pancake or in portions for smaller ones).
5. Cook for 2–3 minutes until bubbles form on the surface and the edges start to look set, then flip and cook for another 1–2 minutes on the other side.
