#Pasta alla Nerano

Ingredients

  • 3 medium zucchini thinly sliced
  • Oil for frying
  • Salt to dewater zucchini
  • .
  • 240 grams spaghetti
  • Salt for water
  • .
  • 4 Tbsp olive oil
  • 2 garlic cloves halved and bud removed
  • 130 grams Pancetta (optional)
  • 5 or more basil leaves chiffonade
  • 200 grams Parmigiana grated
  • Salt and pepper to taste

Directions

  1. Fry zucchini
  2. .
  3. Fry and remove pancetta. Leave the oil
  4. .
  5. Start pasta. Cook 3 minutes less than package says
  6. .
  7. Fry and remove garlic
  8. .
  9. Add fried zucchini and sauté a minute. Add a ladle of pasta water and cook some more. Add the basil
  10. .
  11. When pasta is ready (not done yet), add to the sauce. Stir and add more pasta water to finish the pasta.
  12. .
  13. When pasta is done, turn off heat and add the cheese. Mix well.
  14. .
  15. Add more water and/or water to get enough sauce. Salt and pepper to taste
