  • 2 long red chiles (Mirasol, Holland, cayenne, or Fresno), thinly sliced and seeded
  • 2 teaspoons smoked paprika
  • 3 sprigs fresh thyme, leaves picked
  • Freshly ground black pepper
  • 8 slices good-quality Parma ham
