Paul’s Chili

Ingredients

  • 1 lb. lean ground beef
  • 2 large onions, chopped
  • 2 15.5 oz. cans red kidney bean
  • 2 15.5 oz. cans dark red kidney beans
  • 1 28 oz. can peeled Italian-style tomatoes, cut up
  • 1 14.5 oz. can stewed tomatoes
  • 2 4 oz. cans diced green chili peppers
  • ¼ cup chili powder
  • 1 tsp. garlic powder
  • 1 tsp. dried oregano, crushed
  • ¼ tsp. ground red pepper (optional)
  • 1/8 tsp. pepper

Directions

  1. In a large Dutch oven cook the ground beef and chopped onion till meat is brown and onion is tender. Drain off fat
  2. Stir in the undrained beans, tomatoes, and green chili peppers. Add the chili powder, garlic powder, oregano, ground red pepper, and pepper. Bring to boiling; reduce heat.
  3. Simmer, uncovered, about 1 ¼ hours or till of desired consistency, stirring occasionally. Makes 12 (1-cup) servings.
