Peanut Noodle Salad

Ingredients

  • 2 cups leftover long noodles (spaghetti, linguine, rice noodles, etc)
2 cups lettuce, shredded
1 cup carrots, grated
1 cup cucumber, sliced
1 avocado, sliced
1 cup frozen edamame, thawed
½ red/yellow bell peppers, sliced thin
2–4 radishes, sliced thin
1 tbsp sesame seeds
  • PEANUT DRESSING
  • 1 tbsp soy sauce
2 tbsp peanut butter
¼ cup lime juice
½ tsp minced ginger
1 tsp sesame oil
Water to thin
  • HONEY LIME DRESSING
  • Juice from 2 limes
1 garlic clove, minced
2 tbsp honey
¼ cup olive oil
salt & pepper to taste

Directions

  1. Whisk together all the ingredients for the peanut sauce and add the leftover noodles. Coat and set aside (even in the fridge overnight).
  2. Make honey lime dressing by mixing all ingredients together or shaking in a jar. Set aside.
  3. 3. In a large bowl, add lettuce and veggies. Toss with a drizzle of honey lime dressing (you will have some left over).
  4. 4. Now, to put it all together: add peanut noodles to a plate or bowl, then cover with dressed salad. Sprinkle with sesame seeds. Serve and enjoy.
