Penne Pasta Alforno

Ingredients

  • 8 cups of boiled penne paste
  • 1 gallon Heavy Cream
  • 1/2 lb of butter
  • 1 tablespoon Garlic Powder
  • 3 Tablespoons Salt
  • 3/4 tablespoon Nutmeg
  • 1 cup Ground Parmesan
  • 2 Tablespoons of dried parsley
  • 6 cups of water
  • 1/2 cup cornstarch

Directions

  1. Salt pasta water!!!
  2. After the pasta has cooked, drain thoroughly and pour into a 4 inch hotel pan
  3. In a large pot, add Heavy Cream and Butter, bring to a simmer.
  4. Make slurry using water and cornstarch.
  5. Add slurry to simmering cream, slowly while stirring.
  6. Mix in Parmesan and seasonings.
  7. Carefully pour over noodles and mix well
  8. Label and Cool in walk in.
