Ingredients

  • 60 grams basil leaves
  • 1/2 tsp kosher salt
  • 30 grams pine nuts
  • Zest of 1/2 lemon
  • 2 tsp lemon juice
  • 1 small garlic clove
  • 15 grams parmigiana or pecorino cheese grated or sliced
  • 53 grams (1/4 cup) olive oil
  • 2 Tbsp room temperature butter

Directions

  1. Process all ingredients except oil and butter in a food processor until a paste is formed, scrapping the sides a few times
  2. While processor is running, add oil slowly until incorporated
  3. Add the butter and process until mixed
  4. EXTRA. Add pesto to mortar and work until creamy
