  • 300g organic pasta (penne)
  • 118g edamame beans
  • 100g chicken breast, baked and sliced
  • 31g spinach
  • 11g basil pesto
  • 3g walnuts, toasted and diced
  • 50g lemon juice

Directions

  1. Cook pasta according to packet instructions.
  2. In a bowl, combine cooked pasta, edamame beans, chicken breast and spinach.
  3. Top with pesto, walnuts and lemon juice.
  4. Toss to combine.
  5. Add some grated parmesan cheese.
