PH Thai Cucumber Purée

Ingredients

  • 1.5 oz Fresh Ginger, rough chopped
  • 1.5 oz Fresh Lemongrass, rough chopped
  • 2 oz Shallots, rough chopped
  • 1 oz Garlic, rough chopped
  • 1 Lime, zested
  • 2 Jalapeños, rough chopped
  • 1/4 cup Mint Leaves, rough chopped
  • 1 Bunch Cilantro, rough chopped
  • 1 Bunch Scallions, rough chopped
  • 2 Cucumbers, peeled, seeded, and rough chopped
  • 1/4 cup Fish Sauce
  • 1/2 cup Lime Juice
  • 1 TBSP Yellow Curry Paste
  • 1 TBSP Honey
  • 1/4 cup Sambal
  • Small amount green food coloring.

Directions

  1. 1. Combine all ingredients in blender.
  2. 2. Purée until completely smooth.
  3. 3. Season to taste.
  4. 4. Add half a pinky nail amount of green food coloring, mix thoroughly.
  5. 5. Store in appropriate container. Label, date, and initial.
