Mix all of the above prepared ingredients in a bowl. I like to start with the tomato, then add the onion. You don’t have to use the whole onion - every onion is a different size, go with your gut but don’t use too much - red onion is very intense and can easily overpower the entire dish. Then I add the cilantro, I like to start with half the bunch, mix that in and see how much more I need. Then I add in the jalapeño, lime, and pineapple. This recipe is really good for winging it. The list of ingredients are really more of a guideline, but the sizes of the veggies from your grocery will vary all of the time so you just have to adjust as you go.
