Primal Chaffles

Ingredients

  • 2-3 large eggs
  • 1.5-2 cups cooked chicken, shredded or chopped (chicken thighs have more flavor and won't be as dry as a chicken breast)
  • A 1/3 cup grated of hard aged cheese (totally optional)
  • 1-2 tablespoons butter, ghee, or avocado spray
  • Optional for variety: chopped green onions, red bell pepper, minced garlic and fresh herbs.

Directions

  1. Shred, chop or use a food processor to grind the cooked chicken into very small pieces.
  2. Shred the hard aged cheese if not already prepped.
  3. In a mixing bowl, combine the chicken, shredded cheese IF you are using it, and eggs.
  4. Mix thoroughly. I use my hands for this.
  5. Preheat your waffle maker.
  6. Once hot, grease both the upper and lower griddles so they wont stick.
  7. Add an appropriate amount of the mixture to the center of your waffle maker.
  8. Close and cook until golden brown (about 3-5 minutes).
  9. When it is done the waffle should come off easily.
  10. If it sticks, cook for another minute or two.
  11. Top with whatever you like. Options in Notes.
