Rhubarb Cake

Ingredients

  • 1 1/2 cup rhubarb
  • 2 cups brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 2 cups flour
  • Topping
  • 1/2 cup sugar
  • 1 tsp cinnamon

Directions

  1. Cream butter and brown sugar. Add eggs and vanilla. Put baking soda in buttermilk and add alternately with flour. Stir in rhubarb. Pour into a 9x13 glass baking dish (greased and floured). Top with 1/2 cup sugar and 1 tsp cinnamon mixture. Sprinkle on top of cake.
  2. Bake 30-40 min at 350 degrees.
