Rhubarb Cake
Ingredients
- 1 1/2 cup rhubarb
- 2 cups brown sugar
- 1/2 cup butter
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- 1 cup buttermilk
- 2 cups flour
- Topping
- 1/2 cup sugar
- 1 tsp cinnamon

Directions
- Cream butter and brown sugar. Add eggs and vanilla. Put baking soda in buttermilk and add alternately with flour. Stir in rhubarb. Pour into a 9x13 glass baking dish (greased and floured). Top with 1/2 cup sugar and 1 tsp cinnamon mixture. Sprinkle on top of cake.
- Bake 30-40 min at 350 degrees.
