Roasted Pepper & Tomato Soup

Ingredients

  • 1/2 tbsp extra virgin olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, roughly chopped
  • 6 large tomatoes, roughly chopped
  • 200g roasted red peppers, roughly chopped
  • 600ml vegetable stock
  • Large handful of basil
  • Little cream for drizzling

Directions

  1. 1) Heat oil in a large pan and add onion. Cook for 5 mins until softened
  2. 2) Stir in garlic and tomatoes & cook for further 5 mins
  3. 3) Spoon mixture into blender, then add peppers, stock and basil
  4. 4) Blend until smooth
  5. 5) Transfer to soup dishes and drizzle with cream and oil
