Ingredients

  • 2 tbsp Olive Oil
  • 1 clove Garlic, finely minced
  • 2 large Salmon Fillets (about 200 grams)
  • 1/4 tsp Paprika
  • 1/8 tsp Cayenne Pepper
  • 2 fresh Tomatoes, diced
  • 1 Carrot, chopped
  • 3 tbsp chopped Fresh Parsley
  • 1/8 cup Parmesan Cheese

Directions

  1. Directions
  2. Heat olive oil.
  3. Add salmon and sprinkle with cayenne pepper and paprika
  4. Cook for two minutes each side; add seasoning to the second side.
  5. Add tomatoes, chopped carrot, garlic, and parsley, and continue to cook for another 2-4 minutes to allow the flavors to blend.
  6. Sprinkle with Parmesan cheese and then serve alongside side of your choice.
