Salmon Patties

Ingredients

  • 1 tin 415g red salmon
  • 1c mashed potato
  • 1 small onion
  • 1/2c corn
  • 1T curry powder
  • 2T chopped parsley
  • 2 eggs - 1 for binding, 1 for dipping.
  • 1-1 1/2c Panko breadcrumbs
  • Oil

Directions

  1. Remove crusts from bread and cut into very small squares.
  2. Grate onion and add to bread, mixing with your hands to squeeze the juice out of the onion.
  3. Leave for 10 minutes and then add to other ingredients
  4. Form into 1/4 or 1/3c patties.
  5. Refrigerate 1/2-1h.
  6. Beat egg with 1T water and dip the patties, then pat with crumbs.
  7. Heat oil in pan and cook patties until golden on both sides and heated through.
