Salmon Power Bowl

Ingredients

  • 6 ounce piece Sockeye Salmon ..Season the fish. I use "Chef Paul Prudhomme blackened redfish magic
  • Sliced tomato
  • 1/2 cup cooked Quinoa
  • Spinach..enough to fill the bottom of a bowl
  • 1/2 cup black beans
  • 1/2 cup corn
  • Anything else that appeals for a salad
  • Jalapeno Citrus Dressing
  • 2 tablespoons freshly squeezed lime juice
  • Chopped jalapeno pepper to taste
  • 2 tablespoons honey
  • 1/4 teaspoon ground cumin
  • 1/4 cup olive oil

Directions

  1. Season the fish and grill until desired done-ness.
  2. Fill the bottom of a bowl with spinach
  3. Arrange sliced tomatoes, black beans, quinoa, corn and whatever other selection you chose for your salad
  4. Pour the dressing over the salad and place the salmon on top
