Sausage and Potatoe Casserole

Ingredients

  • 1 pkg. Johnsonville itatlian sausage or Kielbasa or Brat
  • 1 cup diced onions
  • 1 lb. velveeta cheese
  • 2 cups milk
  • 4 cups shredded cheese (whatever variety you like)
  • 1/2 stick butter or margarine
  • salt and pepper, seasoning of choice
  • 3 lbs. potatoes
  • 4 tbl. spoons flour
  • Mushrooms- depending on how many you like. I use frozen mushrooms
  • 1 15 oz. can Rotell (optional)
  • Red Pepper flakes (optional)

Directions

  1. If using frozen mushrooms you should thaw and drain water. Brown sausage about 2/3 done. Slice into half moons or full, bite size. Cook potatoes about 2/3 done. Cut into bite size. Leave skins on or peel before cooking.
  2. Combine in oven safe cookware the sausage, potatoes, mushrooms, milk, onions, flour, 2 cups shredded cheese, velveeta, butter or margarine, salt and pepper or seasoning.
  3. Thoroughly mix and top with 1 cup cheese.
  4. Bake at 350 degrees for 45 to 55 minutes. Let bake until bubbly and top is beginning to brown. If desired you may top off with white/cheese sauce.
