Savoury Mini Quiches

Ingredients

  • SALMON & CAMEMBERT
  • 2 Sheets shortcrust pastry
  • 30g margarine
  • 1 onion, chopped
  • 210g tin salmon
  • 125g camembert
  • 1/4c Parmesan cheese,
  • parsley,
  • 2 beaten eggs,
  • 1c milk or half/half
  • SPINACH, TOMATO & FETA
  • 2 sheets shortcrust pastry
  • 30g margarine
  • 1 onion, chopped
  • 125g feta
  • 1/3c dried tomatoes
  • 1 c fresh spinach, wilted
  • 1/4c grated Parmesan
  • Parsley
  • 2 eggs
  • 1c milk or half/half

Directions

  1. Cut 6 circles from each pastry sheet and line a 6 hole muffin tin.
  2. Melt marg. and cook onion. Cool.
  3. Combine beaten eggs and milk. Add other ingredients, mix and add to cases.
  4. Cook in a mod. oven until golden.
