Sesame Ginger Miso Cucumber Salad

Ingredients

  • - 2 large cucumbers, julienned
  • - 1 carrot, julienned
  • - 1 red bell pepper, thinly sliced
  • - 1/4 cup chopped cilantro
  • - 2 tablespoons sesame seeds
  • - 3 tablespoons soy sauce
  • - 2 tablespoons rice vinegar
  • - 1 tablespoon miso paste
  • - 1 tablespoon honey
  • - 1 tablespoon sesame oil
  • - 1 teaspoon grated ginger
  • - 1 clove garlic, minced
  • - Salt and pepper to taste

Directions

1. In a large bowl, combine the julienned cucumbers, carrot, and sliced red bell pepper.
2. In a small bowl, whisk together the soy sauce, rice vinegar, miso paste, honey, sesame oil, grated ginger, minced garlic, salt, and pepper.
3. Pour the dressing over the vegetables and toss until well coated.
4. Sprinkle sesame seeds and chopped cilantro on top.
5. Chill in the refrigerator for at least 30 minutes before serving.
