1. Preheat oven to 400 degrees. Line a sheet pan with parchment paper or spray with oil.
2. Add chopped veggies to half of the sheet pan. Toss chicken in a mixture of cornstarch, ginger powder, salt and pepper, then add chicken in an even layer to the other half of the pan. Spray with oil and bake in the oven for 12 minutes.
3. Meanwhile, mix together the ingredients for the sauce.
4. Pour sauce over chicken and veggies, then back into the oven for 12-15 minutes. Sauce should be thickened.
5. Mix everything on the sheet pan allowing the sauce to coat the chicken and veggies .
