Simple Roasted Salmon with Green Beans and Lentils

Ingredients

  • 8-ounce salmon fillet
  • 1/2 teaspoon salt
  • 1 lemon
  • freshly ground pepper
  • 2 cups raw green beans, ends trimmed
  • 1 tablespoon olive oil
  • 1 medium shallot, finely minced
  • 2 garlic cloves, finely minced
  • 1 teaspoon paprika
  • 1 1/2 cup water
  • 3/4 cup dry lentils
  • 2 tablespoons tamari
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon honey
  • 1 tablespoon butter

Directions

  1. In medium saucepan with lid heat olive oil over medium heat
  2. Add minced shallot and garlic
  3. Cook and stir for 1 minute
  4. Add paprika, lentils, water and 1 tablespoon tamari
  5. Bring mixture to boil over high heat
  6. Reduce heat to low and cover pot
  7. Simmer and stir occasionally for 55 minutes
  8. Remove pot from heat
  9. Let lentils sit, covered, for 10 mins
  10. Stir in tamari, apple cider vinegar, butter and honey
  11. Preheat oven to 450F
  12. Season salmon with salt and pepper
  13. Cut 3 thin slices of lemon and lay them over the fish
  14. Roast the salmon for 10 minutes
  15. Boil 1/4 cup water and salt in large skillet
  16. Add green beans and reduce heat to simmer
  17. Simmer beans until water is evaporated and beans are tender
  18. Mix beans with lentils
  19. Serve salmon atop the green bean and lentil mixture
  20. Squeeze lemon juice on top
