Skillet Cauliflower With Pine Nuts

Ingredients

  • 1 head cauliflower, chopped
  • Olive oil
  • 1/2 red onion, chopped
  • 2 garlic cloves, chopped
  • Salt & pepper to taste
  • 1/2 cup toasted pine nuts
  • Handful fresh chopped parsley
  • 2 tbsp red wine vinegar

Directions

  1. In a large skillet, heat about 3-4 tbsp olive oil and add cauliflower, onion & garlic.
  2. Stir to combine and sauté - do not stir frequently- let cauliflower brown a bit.
  3. Add red wine vinegar, salt & pepper to season.
  4. Continue to cook until cauliflower is tender and toasted brown - add nuts & parsley. Stir to combine & serve
