Smoked Cod Soup

Ingredients

  • 250 g Potatoes
  • 1 brown onion
  • 2 Sticks Celery
  • 2 Cloves Garlic chopped
  • 1 tsp Fennel Seeds
  • 1 Tsp Tumeric
  • 250mls milk
  • 500mls vegetable stock
  • 300 g Fillet of Smoked Cod
  • 1 tbsp chopped dill
  • 1/2 tsp white pepper

Directions

  1. Peel and cut potatoes into 3cm dices
  2. Heat 1 tbsp oil in saucepan and add onion, celery, potato, garlic and fennel seeds
  3. Cook gently for several minutes then add Tumeric, milk, vegetable stock and white pepper.
  4. Bring to boil then simmer for 10 mins.
  5. Add cod and simmer another 10 mins
  6. Remove cod and cool
  7. When cool flake fish
  8. Using processor or stick blender to blitz soup til smooth
  9. Add lemon juice
  10. Serve soup with flaked fish scattered on top
