  • 300g cod fillets, skinned, boned and cut into chunks
  • 75g butter
  • 75g plain flour
  • 500ml warm milk
  • 110g cheddar cheese, grated
  • 1 tsp dijon mustard
  • Sea salt and freshly ground black pepper
