  • 2) One Avocado
  • 3) Five Mushrooms
  • 4) Three Tomatoes
  • 5) Two Eggs

Directions

  1. Dice up the mushrooms, normally I'd use around five decent sized ones, and chuck them into a frying pan with some coconut or olive oil, on a medium/high heat stirring every now and then.
  2. Whilst the mushrooms cook, slice your avocado in half and spoon out the flesh. Then using a fork, mash it up into a paste.
  3. Take two slices of your sourdough a pop them into the toaster till they get crispy. Then place onto a plate and put the avocado paste onto the top of each slice.
  4. Once the mushrooms are cooked, take them out of the frying pan and place on top of the avocado paste.
  5. Then using the same frying pan, crack two eggs into the pan. Once cooked slide them on top of the cooked mushrooms.
  6. Finally, get a couple of tomatoes and cut them into halves before scattering them on top of the plate.
  7. Feeds one. Take 10 mins.
