Ingredients

  • 2 lbs Ground Turkey
  • 4-6 oz frozen corn
  • 1 can black beans
  • 4 large eggs
  • Salt
  • 1 tsp Crushed red pepper
  • 1/2 jalapeño diced small
  • 1/2 white onion diced
  • 3 garlic cloves or 2 tbsp minced garlic
  • 1/2 diced tomato
  • Fresh Cilantro
  • 2 tbsp Hot sauce (tabasco or preferred favorite)
  • Fresh arugula (optional)

Directions

  1. Use hands to carefully mix all ingredients in a large mixing bowl. Spray 9x13 pan to prevent sticking. Add mixture to pan
  2. Bake at 375 for 45-50 min.
  3. When serving top with fresh cilantro & hot sauce For "wow factor" top with an over medium egg and serve on bed of fresh arugula
