Spinach And Fontina Cheese Quiche

Ingredients

  • 2 frozen deep dish pie crust (9"- thawed)
  • 3/4 cup 2% cottage cheese
  • 9 egg whites
  • 3 eggs
  • 1/4 cup onion - diced
  • 3 cups baby spinach
  • 4 oz. Ham steak - diced
  • 1 Tbsp minced chives
  • 1/4 tsp red pepper flakes
  • 1/4 cup Fontina cheese - shredded

Directions

  1. Preheat oven to 400 degrees
  2. Pre-bake pie crust

Purée:

  1. 3/4 cup 2% cottage cheese
  2. 9 egg whites
  3. 3 eggs

Sauté:

  1. 1/4 cup onion - diced
  2. 3 cups baby spinach
  3. 4 oz. Ham steak - diced
  4. 1 Tbsp minced chives
  5. 1/4 tsp red pepper flakes
  6. Sauté onion in oil in skillet over medium heat until softened (approx. 3 minutes). Add spinach and cook until wilted, then stir in the ham, chives, and pepper flakes. Transfer spinach mixture to pre-baked crust, and place on baking sheet. Pour in egg mixture into crust.

Sprinkle with:

  1. 1/4 cup Fontina cheese - shredded
  2. Sprinkle quiche with fontina cheese and bake in oven 35-40 minutes, or until filling is set in the center
