Spinach Artichoke Bread

Ingredients

  • 8 oz cream cheese
  • 3/4 c plain nonfat Greek yogurt
  • 2 C flat leaf spinach
  • 2tbsp water
  • 12 oz artichoke quarters; drained
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 C shredded mozzarella; divided
  • 1/4 C Parmesan cheese
  • 4 French rolls or 2 French baguettes

Directions

  1. Preheat oven to 375
  2. Beat cream cheese with an electric mixer until smooth. Add yogurt and continue mixing until blended
  3. Place spinach & water in bowl and microwave 2 mins. Allow to sit one minute and drain, squeezing to remove excess water. Cool
  4. Chop spinach & artichokes. Fold in cream cheese mix. Add onion powder, garlic powder, salt, 1/4 C mozzarella & Parmesan.
  5. Cut French bread in half. Slight hollow each half by removing some bread from middle.
  6. Fill with mixture & sprinkle with mozzarella
  7. Place loaves on baking sheet. Bake for 15-20 mins. Cool, slice and serve
