Stahl White Chili

Ingredients

  • 1-2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cans chicken chunks
  • 3 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 3-4 small cans green chilis
  • 30 oz chicken broth
  • 4 cans Great Northern beans, rinsed
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 cups sour cream
  • 1 cup heavy whipping cream
  • Cheyenne pepper, optional

Directions

  1. Add olive oil to a stock pot on medium heat.
  2. Once hot, add onions and cook for 3-5 minutes or until soft.
  3. Add chicken, garlic powder, and cumin, and cook for 2 more minutes.
  4. Add green chilis (including juice), broth, beans, salt and pepper.
  5. Bring to a boil and reduce to a simmer uncovered for 30 minutes.
  6. Add the creams.
  7. Stir well until combined and the chili is hot.
  8. Serve with crackers if desired and top with a sprinkle of cayenne pepper for a little kick.
