STEAK AND MUSHROOM KABOBS WITH MINT YOGURT DIP

Ingredients

  • 2 pounds sirloin steak, cut in 1-inch cubes
  • FOR THE STEAK MARINADE
  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 3 cloves garlic, minced
  • salt and fresh ground pepper, to taste
  • FOR THE KABOBS
  • metal skewers
  • 24 ounces baby portobello mushrooms, cleaned and stems removed
  • 1 large red onion, cut into 1-inch pieces
  • FOR THE MINT YOGURT DIP
  • 1 cup plain yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1/2 cup finely chopped mint
  • salt and fresh ground pepper, to taste
  • drizzle of olive oil
