Ingredients

  • 1/3 cup plus 1 tablespoon olive oil, divided
  • 2 cups fresh or frozen corn kernels, thawed if frozen
  • 1 3/4 teaspoons kosher salt, divided
  • 2 (about 1-inch-thick) boneless New York strip steaks (about 12 ounces each), trimmed of excess fat
  • 3/4 teaspoon freshly ground black pepper, divided
  • 1 tablespoon neutral oil, such as vegetable or canola
  • 3 tablespoons freshly squeezed lemon juice (1 medium lemon)
  • 4 medium scallions, white and light green parts thinly sliced (about 1/4 cup)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 medium head butter lettuce, leaves separated
  • 6 ounces cherry tomatoes, halved (about 1 1/4 cups)
  • 2 ripe but firm medium avocados, halved, pitted, peeled, and diced
  • 2 ounces feta cheese, crumbled (about 1/2 cup)
  • 1/3 cup fresh basil leaves (about 2 sprigs)
