Steamed Mussels

Ingredients

  • 2 lbs of Prince Edward Island Mussels
  • 1 large Vidalia onion
  • 2 1/2 cups of white wine
  • 2 tablespoons of garlic purée
  • 2 on the vine tomatoes
  • 1/4 cup of fresh thyme leaves
  • 1/4 cup of fresh chopped sage leaves
  • Extra virgin olive oil (to saute)

Directions

  1. Find a wide shallow pan to make this recipe in. 2lbs of mussels is a really decent amount.
  2. Clean mussels if not already.
  3. Dice onions and tomatoes to about an 1/8 of an inch
  4. Sauté onions, high heat, until translucent. Add garlic, tomatoes, herbs and sauté for 2 more minutes. Add wine, bring to boil, add mussels and cover. Check after 5 minutes, if not open, check after another 5.
  5. Using tongs, transfer mussels to a large serving bowl or single serve plates and top with sauce and veg from pan.
