Find a wide shallow pan to make this recipe in. 2lbs of mussels is a really decent amount.
Clean mussels if not already.
Dice onions and tomatoes to about an 1/8 of an inch
Sauté onions, high heat, until translucent. Add garlic, tomatoes, herbs and sauté for 2 more minutes. Add wine, bring to boil, add mussels and cover. Check after 5 minutes, if not open, check after another 5.
Using tongs, transfer mussels to a large serving bowl or single serve plates and top with sauce and veg from pan.
