Strawberry Lemon Poppyseed Balls

Ingredients

  • 1/2 raw cashews, rinsed
  • 1.5 Tbsp Nikki’s Vanilla Cake coconut butter
  • 1/8 cup coconut flour
  • 1/2 Tbsp Coconut oil (use less next time or none at all)
  • 3 medjool dates
  • 1 Tbsp lightly toasted poppy seeds
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1/8 cup freeze dried strawberries

Directions

  1. Pulse everything in a food processor or high powered blender (expect for the cherries) until well combined and then add in strawberries and pulse a few times.
  2. Roll into balls and freeze for an hour and enjoy! I like to keep mine in freezer taste so much better almost frozen,it's like a fudge.
