Tara's Columbian Chicken Soup (Ajiaco)

Ingredients

  • 3 lbs chicken
  • 1 white onion
  • 1 leek
  • 1 green bell pepper (cored, seeded and cut into 1" pieces
  • 2 quarters ears fresh corn cut into
  • 2 ribs celery cut into 1" pieces
  • 2 large carrots cut into 1" pieces
  • 2 1/2 lbs potatoes cut into 1" pieces
  • 6 cloves garlic
  • 1/2 cup cilantro
  • 2 chicken bouillon cubes
  • 1 tbs kosher salt

Directions

  1. Put chicken in large pot, add 8 cups water.
  2. Boil for 10 minutes (skimming foam).
  3. Add vegetables and bouillon and salt.
  4. Partially cover and stir occasionally for 1 1/2 hours.
  5. Use tongs to take chicken out of pot and put on a plate.
  6. Remove bones and throw away (my husband says that in Mexico, they don't remove the bones, we agree to disagree on that, but you do whatever you want).
  7. Put soup, chicken, aji (see my recipe, it's like a salsa), sour cream, avocado slices, and cilantro on the table and enjoy.
