Tara's Pumpkin Bread

Ingredients

  • 2 Cups sugar
  • 2 Cups canned pumpkin
  • 1/2 Cup canola oil
  • 1/2 Cup prepared fat-free vanilla pudding
  • 4 large eggs
  • 3 Cups all-purpose flour
  • 2 Teaspoons ground cinnamon
  • 1 1/4 Teaspoons salt
  • 1 Teaspoon baking soda

Directions

  1. Preheat oven to 350 degrees.
  2. Combine first 5 ingredients in a bowl and stir to mix well.
  3. Combine flour, cinnamon, salt and baking soda in a medium bowl; stir to mix well.
  4. Add flour mixture to the pumpkin mixture; just until moist.
  5. Spoon batter into to loaf pans you've sprayed with cooking spray.
  6. Bake for 1 hour and 15 minutes (or until toothpick inserted comes out clean). Cool 10 minutes on a wire rack and then remove from pans. Let cool completely on wire rack.
