Tara's Smoky Chicken Tortilla Soup

Ingredients

  • 3 cups Chicken Stock
  • 1 lb Chicken Tenders
  • 1 Bay Leaf
  • 1 tbsp EVOO
  • 4 slices thick center cut Bacon
  • 1 Onion
  • 4 cloves Garlic
  • 2 Chipotle Chilies
  • 28 cans oz Crushed Fire-Roasted Tomatoes
  • 3 cups Corn Tortilla Chips
  • 2 cups Shredded Smoked Mozzarella or Sharp White Cheddar
  • 1 Lime
  • 1/2 Red Onion
  • chopped fresh Cilantro, for garnish

Directions

  1. Simmer stock, add bay leaf and poach Chicken Tenders for 6-7 minutes
  2. In a soup pot, medium high heat, cook bacon, then remove bacon to drain on a paper towel, drain all but 3 tbsp fat.
  3. Use fat to sautee Onions and garlic for 5 minutes, then add chipotles, adobo and tomatoes.
  4. Dice poached chicken and add it and the stock to the soup pot, NOT the bay leaf. Salt to taste.
  5. To serve, put a couple handfuls of crushed chips in the bottom of bowl, cover chips with a couple handfuls of cheese, then ladle soup. Garnish with Lime, cilantro, and bacon. Enjoy!!!
