Simmer stock, add bay leaf and poach Chicken Tenders for 6-7 minutes
In a soup pot, medium high heat, cook bacon, then remove bacon to drain on a paper towel, drain all but 3 tbsp fat.
Use fat to sautee Onions and garlic for 5 minutes, then add chipotles, adobo and tomatoes.
Dice poached chicken and add it and the stock to the soup pot, NOT the bay leaf. Salt to taste.
To serve, put a couple handfuls of crushed chips in the bottom of bowl, cover chips with a couple handfuls of cheese, then ladle soup. Garnish with Lime, cilantro, and bacon. Enjoy!!!
