Thai-style Tuna Fried Rice

Ingredients

  • 4-5 Tbs olive oil
  • 2 eggs lightly beaten
  • 2/3 cups salad shrimp (optional)
  • 3 cloves garlic
  • 1 can tuna, drained
  • 4-6 cups rice, cooked
  • 1 Tbs sugar
  • 1 Tbs soy sauce
  • 1/4 cup chopped basil
  • 2 Tbs cilantro

Directions

  1. 1. Heat oil over medium heat; add rice, shrimp, garlic, tuna, sugar, soy sauce, basil, and cilantro. Heat through.
  2. 2. Push rice mixture to the side. Add small amount more oil. Cook eggs.
  3. 3. Mix eggs with rice mixture. Cook till rice is slightly browned.
