Tomato Chutney

Ingredients

  • Recipe:
  • Onion: 4, finely chopped
  • Tomatoes: 2 medium ones, cut into slightly bigger cubes
  • Oil: 2 tspn
  • Mustard seeds/rai: 1 tspn
  • Chilly powder: 2-3 tspns (as per ur taste)
  • Salt: as per taste
  • Sugar: 1 tspn
  • Peanuts: 3 tspns, roasted and coarsely ground
  • Finely chopped coriander leaves
  • Heat oil in a thick bottom pan
  • Add rai, let it splutter
  • Sauté onions till they turn pink
  • Then add tomatoes and cook till they are soft. Take care that the tomatoes do not turn mushy.
  • Once soft, add chilly powder, salt and sugar. Mix well and let it simmer for 2 minutes till all the flavours come together.
  • Finally add peanuts and mix well. Garnish with coriander leaves.
