Tortilla Soup
Ingredients
- 1 onion - chopped
- 1 red paper - chopped
- 3 cloves garlic, minced
- 2 yellow squash, diced
- 4 zucchini squash, diced
- 1 rotisserie chicken - skinned, deboned, diced
- 1 t oregano
- 1 t cumin
- 3 chipotle peppers in adobo sauce, diced
- 28 oz stewed tomatoes (original flavor) break them up with your hands (2 cans)
- 8 oz tomato sauce - 1 can
- 32 oz chicken broth - 1 box
- 1 can golden hominy drained and rinsed - or chick peas
Directions
1. Sauté first three ingredients in olive oil for 5 minutes
2. Sauté next six ingredients for 5-10 minutes.
3. Add next four ingredients and simmer about 1 hour.
Serve with; blue corn chips, sour cream, sharp cheddar cheese, avocado, and cilantro
